Red gurnard

Chelidonichthys lucerna

Gurnard is a species of fish native to the Mediterranean, but nowadays increasingly common in the English Channel and our own North Sea. The red gurnard is caught mainly by vessels using the so-called flyshoot technique. Because of this technique, the fish hardly gets damaged, which benefits the quality.
